Kilchoman 100% Islay 11 Year Old Sherry Cask

Kilchoman 100% Islay 11 Year Old Sherry Cask was distilled using 2011, 2012 and 2013 publican barley harvests grown on the Farm on which the distillery sits and matured for a minimum of 11 years in ex-oloroso sherry butts. Bottled at 50% abv. with no added colour or chill-filtration, this release combines 16 individually selected first-fill oloroso sherry butts originally used by José y Miguel Martin, Jerez, Spain.

Nose: Rich malt and gentle peat wrapped in dried fruits, toffee, and warm baking spices. Hints of orange peel and coastal sea breeze.

Palate: Layers of sherried sweetness, raisins, figs, and honeyed malt, balanced by earthy smoke, roasted nuts, and oak spice.

Finish: Long and warming, with lingering peat embers, sweet sherry fruit, and a touch of salted caramel.
